A heating system is required to heat edible oil to the required frying temperature. There are two basic design systems used for this purpose. These systems are known as indirect heating and direct heating systems. Indirect heating system: the heat is transferred to the frying oil through a heat exchanger using hot thermic fluid or steam as the heating media. The frying oil is circulated through the heat exchanger. Powerful and efficient pumps are needed in these systems. The heating medium can be steam or thermic fluid. The heating system can use electricity, gas, diesel or agro waste as fuel. Direct heating system: these systems use fuel to directly heat the oil. The heat is transferred directly to the oil by electric heaters or gas/diesel fired automatic burners. The heating systems are either directly immersed in the oil or are placed just below the product frying zone. Alternatively the heating system can be in the form of an edible oil heater. This can be placed outside the frying room.
