In the manual method using dosing cans, ethylene gas is used for ripening most of the climacteric fruits like banana, mango, papaya, etc., under controlled conditions of temperature, humidity and ethylene concentration in air tight, ethylene proof room. Ripening can be done using gas in cold room as sizes as low as 2 tonnes to 20 tonnes manually. The company has developed fixed dosage cans, which are meant for fix tonnage rooms. The customer has just to release the gas inside the room and close it for 16 hrs. The gas closed is enough to trigger the ripening process. This is completely foolproof method and since the ethylene gas is getting released in the chamber and is also measured the ripening process will start provided the room is not opened for 16 hours. The procedure: precool the banana to 18 to 20°C. Take the dosing can inside the room and close the door. Empty the can inside the room. Close the door without opening the door completely. Lock the door so that no one opens the door before 18 hours. Customers having cold rooms: these cans can be used as emergency supplies if everything fails down.
