Frying vessel: a container to hold the hot oil in which food is fried. It is an insulated stainless steel vessel with connections for edible oil circulation, distribution and filtration. Vessel designs range from simple single flow design to complex multi flow designs. 2. Hood: continuous fryers are covered to conserve energy. The hood contains ducts to remove steam and volatiles. 3. Filter system: a filter system is needed to remove the solids from the circulating hot oil. It is a standard feature on most fryers. 4. Conveying system: conveyors move the product through the frying system. These include infeed, transport, submerging and take off systems. Conveying systems are specific and product dependent. 5. Lifting system: it is a means to lift the hood and conveyor from the fryer vessel for cleaning and maintenance. This can be done manually or by mechanical methods. 6. Control panel: a control panel is built to set and control the various parameters to get the desired level of frying. These range from simple panels to complex PLC based touch screen panels. 7. Oil holding tanks: the system must have a source of cooking oil. Most operations add fresh oil to the fryer during operation to ensure that oil level in the fryer is maintained at the desired level. Some systems also have a holding tank to store used oil after the frying operation.
