High pressure processing (HPP) is a way to process foods without using heat. It has the potential to process high quality, fresh, nutritious, safe – to eat foods, without using any chemical preservatives. With (HPP) it is possible to produce safe fresh foods with enhanced organoleptic (smell, taste, etc), nutritional and functional properties with an extended shelf life. High pressure processing can be used to process both liquid and solid foods like fruits, vegetables, juices, smoothies, raw meat/marination, sea food, jams, sauces, spreads, jellies, salad dressings, yoghurt, ready meals, meat products, fish, oysters, 100% meat separation from shells for lobsters and crabs. Pressure is applied equally in all directions. Food borne pathogens and other organisms causing spoilage cannot survive the pressure. The pressure interrupts their cellular activities and they die. The high pressure produced by the processing equipment interrupts with biological functions of micro organisms and they die of with no – limited effects to sensory properties of the food. Also this process is totally environment friendly and consumes less energy than the traditional thermal Pasteurisation.
